Malva pudding

A spongy cake with apricot jam, soaked while hot in a sauce of cream and butter. The pudding of Cape farms and the Stellenbosch vineyards.

  • Serves 8
  • 1 h

Ingredients

  • 200 g sugar
  • 1 egg
  • 1 tablespoon of apricot jam
  • 150 g flour
  • 1 teaspoon of bicarbonate of soda
  • 1 tablespoon of butter
  • 1 teaspoon of vinegar
  • 250 ml milk
  • Sauce: 250 ml cream, 100 g butter, 100 g sugar, 100 ml hot water

How to make it at home

  1. Beat the sugar with the egg and the jam.
  2. Melt the butter with the vinegar and mix it with the milk.
  3. Add the flour with the bicarbonate of soda and the milk to the mixture, alternating. Bake in a dish at 180 °C for about 40 minutes.
  4. Meanwhile, heat the sauce ingredients until everything melts.
  5. When the cake comes out, prick it all over and pour the hot sauce over the top. Serve warm with custard or ice cream.

The trick: Let it soak up the sauce for a few minutes before serving.
