Andong jjimdak

Chicken braised with sweet potato noodles, vegetables and chilli in a dark, sweet soy sauce. It was born in Andong market in the eighties and is now eaten all over Korea.

  • Serves 4
  • 1 h

Ingredients

  • 1 kg chicken pieces
  • 100 g sweet potato noodles (dangmyeon)
  • 2 potatoes and 1 carrot
  • 1 onion and 4 spring onions
  • 2 dried chillies
  • 6 tablespoons of soy sauce
  • 3 tablespoons of brown sugar or molasses
  • 1 tablespoon each of chopped garlic and ginger
  • Sesame oil

How to make it at home

  1. Soak the noodles in warm water for 30 minutes.
  2. Blanch the chicken and rinse it.
  3. Put the chicken in a casserole with the soy sauce, sugar, garlic, ginger, chillies and 500 ml of water, and cook for 20 minutes.
  4. Add the potato, carrot and onion in chunks and cook for 15 minutes more.
  5. Add the noodles and spring onion, cook for 5 minutes and finish with sesame oil.

The trick: The noodles soak up the sauce quickly: add them at the end.
