Bibimbap

Rice with sautéed vegetables, meat, egg and gochujang, mixed together at the last moment. The one from Jeonju, Korea’s food city, is the most famous.

  • Serves 4
  • 50 min

Ingredients

  • 400 g cooked rice
  • 200 g minced beef or beef strips
  • 200 g spinach
  • 200 g bean sprouts
  • 2 carrots
  • 1 courgette
  • 6 shiitake mushrooms
  • 4 eggs
  • Gochujang, soy sauce, sesame oil, garlic and toasted sesame seeds

How to make it at home

  1. Marinate the meat with soy sauce, garlic and sesame oil and stir-fry it.
  2. Blanch the spinach and bean sprouts and dress them with sesame, garlic and salt.
  3. Stir-fry the carrot, courgette and mushrooms separately, in strips.
  4. Put the rice in bowls (ideally hot stone ones, so it crisps up) and arrange each ingredient separately on top, with a fried egg or a yolk in the centre.
  5. Add gochujang and sesame oil and mix everything at the table.

The trick: In a stone bowl (dolsot), the rice at the bottom turns crispy.

Where and what to eat

To eat like a local: a restaurant with banchan. The dishes you can’t miss are in the South Korea guide.
