What to do: Book reserved shinkansen seats and your hotels as early as possible.

  • June, July

    Rainy season (tsuyu)

From early June to mid-July it rains often and it’s hot and humid.

What to do: Bring a folding umbrella and keep an indoor plan for each day; Hokkaido escapes it.

  • July, August

Monsoon rains (jangma) and the odd typhoon

In July and August it rains a lot and it’s hot and humid; a typhoon may pass through in late August.

What to do: Keep an indoor plan for every day (museums, covered markets, palaces with covered areas).

  • August, September

    A typhoon may pass through

In August and September a typhoon can stop trains and flights for a day (in October it’s rare).

What to do: Have an indoor plan (museums, covered temples, onsen) for the day it happens.

Dwaeji gukbap

Busan’s pork and rice soup: a milky broth of pork bones with sliced meat, seasoned at the table with salted shrimp, spring onion and chilli. It was born during the Korean War.

  • Serves 4
  • 4 h

Ingredients

  • 1.5 kg pork bones
  • 500 g pork shoulder or belly
  • 1 onion, 1 leek and 1 head of garlic
  • 1 piece of ginger
  • Cooked white rice
  • Spring onion, salted shrimp (saeujeot) or fish sauce, Korean chilli and kimchi

How to make it at home

  1. Soak the bones in cold water for 1 hour, blanch them and rinse.
  2. Boil them hard with the onion, leek, garlic and ginger for 3 hours, topping up with water: the broth turns white.
  3. Cook the meat in the broth for the last hour and slice it.
  4. Strain the broth and season with salt.
  5. Serve the rice, meat and boiling broth in bowls, with spring onion, salted shrimp, chilli and kimchi so everyone can season their own.

The trick: A rolling boil, not a gentle simmer, is what makes the broth white and creamy.

Where and what to eat
