Gyeongju bread
Little round pastries of thin dough filled with red bean paste and stamped with a chrysanthemum on top. They’ve been made in Gyeongju, the old capital of the Silla kingdom, since 1939.
Ingredients
- 200 g flour
- 1 egg and 1 yolk
- 50 g sugar
- 20 g butter
- 1 tablespoon of honey
- 1/2 teaspoon of bicarbonate of soda
- 400 g sweet red bean paste (anko)
- Egg yolk for brushing
How to make it at home
- Beat the egg with the sugar, honey and melted butter, then add the flour with the bicarbonate of soda to make a soft dough.
- Divide the dough and the filling into 12 portions.
- Flatten each portion of dough, put a ball of filling in the middle and close it up.
- Flatten them slightly, mark them with a stamp or a fork and brush with yolk.
- Bake at 180 °C for about 15 minutes, until golden.
The trick: Lots of filling and little dough: that’s the hallmark of Gyeongju bread.
