Caldereta de langosta (lobster stew)

Menorca’s star dish, from around Fornells and Ciutadella: spiny lobster stewed in a sofrito of tomato and onion, served with slices of bread.

  • Serves 4
  • 1 h 15 min

Ingredients

  • 2 spiny lobsters
  • 2 onions
  • 4 ripe tomatoes
  • 1 green pepper
  • 3 garlic cloves
  • Parsley, olive oil and salt
  • 1 l fish stock
  • Slices of toasted bread

How to make it at home

  1. Cut up the lobster, keep the coral and the juices, and brown it in oil.
  2. In the same oil, make a sofrito with the onion, pepper, garlic and grated tomato.
  3. Add the lobster and the stock, and cook for 15 minutes.
  4. Pound the coral with parsley and garlic, add it and cook for 5 minutes more.
  5. Serve in an earthenware pot with slices of bread.

The trick: In Menorca it’s eaten straight from the pot, dipping the bread in the broth.

Where and what to eat

To eat like a local: the neighbourhood taberna. The dishes you can’t miss are in the Spain guide.
