Flaó

Ibiza’s tart of fresh cheese, eggs and mint on an aniseed pastry, typical at Easter.

  • Serves 8
  • 1 h 30 min

Ingredients

  • Pastry: 250 g flour, 1 egg, 50 ml oil, 1 dash of anise liqueur and a pinch of salt
  • Filling: 500 g fresh sheep’s or goat’s cheese, 4 eggs, 200 g sugar
  • A handful of fresh mint leaves
  • Icing sugar

How to make it at home

  1. Knead the flour with the egg, oil, anise and salt, and line a tin.
  2. Beat the cheese with the eggs and sugar.
  3. Chop the mint and mix it into the filling.
  4. Pour the filling into the tin and bake at 180 °C for about 45 minutes.
  5. Leave to cool and dust with icing sugar.

The trick: Fresh spearmint gives it its unique flavour: don’t swap it for dried mint.
