Tumbet

Mallorca’s oven-baked vegetable dish: layers of fried potato, aubergine and red pepper with a homemade tomato sauce, served alongside the island’s meat and fish.

  • Serves 4
  • 1 h 15 min

Ingredients

  • 4 potatoes
  • 2 aubergines
  • 3 red peppers
  • 1 kg ripe tomatoes
  • 3 garlic cloves
  • Olive oil, salt and a pinch of sugar

How to make it at home

  1. Slice the potatoes and aubergines and cut the peppers into strips, then fry each vegetable separately.
  2. Make a tomato sauce with the garlic, tomato, salt and sugar, cooked for 20 minutes.
  3. In an earthenware dish, layer the potato, aubergine and pepper, with sauce between each layer.
  4. Finish with tomato sauce on top and bake for 15 minutes at 180 °C.

The trick: It’s even better warm, the next day.

Where and what to eat
