Papet vaudois

Leeks and potatoes cooked with cream, served with cabbage sausage (saucisse aux choux) from the canton of Vaud, home to Lausanne. Its colours are those of the canton’s flag: green and white.

  • Serves 4
  • 1 h

Ingredients

  • 1 kg leeks
  • 500 g potatoes
  • 1 onion
  • 200 ml white wine
  • 100 ml cream
  • 2 cabbage sausages or smoked pork sausages
  • Butter, salt and pepper

How to make it at home

  1. Slice the leeks and soften them with the onion in butter.
  2. Add the diced potatoes, the wine and a little water.
  3. Lay the sausages on top, cover and simmer gently for 45 minutes.
  4. Add the cream and season.
  5. Serve the papet with the sausages sliced.

The trick: The sausages cook whole on top of the papet: that way they add flavour without bursting.

Where and what to eat

To eat like a local: the Beiz (local tavern). The dishes you can’t miss are in the Switzerland guide.
