Rösti

A crisp cake of grated potato fried golden in butter. It was the breakfast of Bern’s farmers and is now the national dish, served alongside almost everything.

  • Serves 4
  • 40 min

Ingredients

  • 1 kg potatoes boiled in their skins the day before
  • 50 g butter
  • Salt and pepper
  • Optional: bacon, onion or cheese

How to make it at home

  1. Peel the cold potatoes and grate them on a coarse grater.
  2. Season the grated potato and mix it with your hands.
  3. Melt half the butter in a frying pan, add the potato and press it into a cake.
  4. Fry it over a medium heat for about 15 minutes without stirring, until a crust forms.
  5. Flip it with a plate, add the rest of the butter and brown the other side.

The trick: Boiled, cold potatoes grate better and stay separate.

Where and what to eat

To eat like a local: the Beiz (local tavern). The dishes you can’t miss are in the Switzerland guide.
