Zürcher Geschnetzeltes

Strips of veal with mushrooms in a white wine and cream sauce, Zurich’s signature dish. It’s always served with rösti.

  • Serves 4
  • 30 min

Ingredients

  • 600 g veal tenderloin or topside, in thin strips
  • 250 g mushrooms
  • 1 shallot
  • 150 ml white wine
  • 100 ml beef stock
  • 200 ml cream
  • 1 tablespoon flour
  • Butter, parsley, salt and pepper

How to make it at home

  1. Dust the meat with flour and brown it in butter over a high heat, in batches, for 1 minute. Set aside.
  2. In the same pan, soften the shallot and the sliced mushrooms.
  3. Pour in the wine and let it reduce; add the stock and cream.
  4. Simmer until the sauce thickens and return the meat just to heat through.
  5. Season, add parsley and serve with rösti.

The trick: Set the meat aside almost raw: it finishes cooking in the sauce.
