Sadza with nyama

Zimbabwe’s everyday meal: sadza, a firm white-maize porridge, with nyama (meat stewed with tomato and onion) and muriwo, leafy greens.

  • Serves 4
  • 1 h 30 min

Ingredients

  • 400 g fine white maize flour
  • 1 litre of water
  • 600 g stewing beef
  • 1 onion
  • 2 tomatoes
  • 1 teaspoon of mild curry powder
  • 500 g spring greens or spinach
  • Oil and salt

How to make it at home

  1. Brown the meat in oil, add the onion, tomato and curry powder, cover with water and simmer for 1 hour.
  2. Stir-fry the greens in strips with a little onion and tomato.
  3. For the sadza, heat the water, add a third of the maize meal to make a thin porridge and cook for 5 minutes.
  4. Add the rest of the meal gradually, stirring hard until it’s firm and comes away from the pan.
  5. Serve the sadza with the meat and greens.

The trick: It’s eaten with your hand: a little ball of sadza to scoop up the sauce.
