Grüne Soße

Frankfurt’s green sauce, made with seven fresh herbs, yoghurt and soured cream. It’s served cold with boiled potatoes and hard-boiled eggs, especially in spring.

  • Serves 4
  • 30 min

Ingredients

  • 200 g fresh herbs: parsley, chives, watercress, sorrel, borage, chervil and salad burnet (or whatever you can find)
  • 200 g soured cream
  • 200 g natural yoghurt
  • 1 tablespoon of mustard
  • 1 tablespoon of oil and 1 of vinegar
  • 6 hard-boiled eggs
  • 1 kg small potatoes
  • Salt, pepper and a pinch of sugar

How to make it at home

  1. Wash the herbs, remove the thick stalks and chop them very finely (or blitz them briefly).
  2. Mix the soured cream with the yoghurt, mustard, oil and vinegar.
  3. Add the herbs and two mashed hard-boiled yolks; season and leave to rest in the fridge for 1 hour.
  4. Boil the potatoes in their skins.
  5. Serve the sauce with the potatoes and the hard-boiled eggs cut in half.

The trick: In Frankfurt they sell the seven herbs ready-bundled in a paper parcel.
