Käsespätzle

Fresh egg noodles in irregular strands, baked with mountain cheese and fried onion: the dish of the Allgäu Alps, around Füssen and Neuschwanstein.

  • Serves 4
  • 45 min

Ingredients

  • 400 g flour
  • 4 eggs
  • 150 ml sparkling water
  • Salt and nutmeg
  • 300 g grated mountain cheese (Emmental, Bergkäse or Gruyère)
  • 3 onions
  • 50 g butter

How to make it at home

  1. Beat the flour with the eggs, water, salt and nutmeg until the batter bubbles and comes away from the spoon. Leave to rest for 15 minutes.
  2. Slice the onion into rings and fry it in butter until golden and crisp.
  3. Press the batter through a spätzle maker (or a colander with large holes) straight into boiling salted water. When they float, lift them out with a slotted spoon.
  4. In a hot dish, alternate layers of spätzle and cheese.
  5. Finish with the fried onion and grill for 5 minutes.

The trick: Without a spätzle maker, scrape strips of batter off a wet board with a knife, the way grandmothers do.
