Schneeballen

Rothenburg’s “snowballs”: strips of fried pastry wound into a ball and dusted with icing sugar. You’ll see them in every shop window in the medieval town.

  • Serves 6
  • 1 h

Ingredients

  • 250 g flour
  • 3 egg yolks
  • 50 g cream
  • 30 g butter
  • 2 tablespoons of schnapps or kirsch
  • 1 pinch of salt
  • Oil for frying
  • Icing sugar

How to make it at home

  1. Knead the flour with the yolks, cream, butter, schnapps and salt until you have a smooth dough. Leave to rest for 30 minutes.
  2. Roll it out very thinly and cut out squares of about 15 cm.
  3. Cut each square into strips, leaving the edges attached, and loosely wind the strips into a ball.
  4. Fry the balls in oil at 170 °C (in a ladle so they hold their shape) until golden.
  5. Drain them and dust them generously with icing sugar.

The trick: In Rothenburg they also dip them in chocolate or fill them with marzipan.
