Baleadas

Honduras’s best-loved food: a thick, soft flour tortilla folded over refried beans, grated hard cheese and mantequilla, plus egg, avocado or meat if you like.

  • Serves 4
  • 1 h

Ingredients

  • 400 g flour
  • 1 teaspoon of baking powder
  • 60 g lard or butter
  • 250 ml warm water or milk
  • Salt
  • 400 g refried red beans
  • 150 g grated hard cheese (or feta)
  • Honduran mantequilla (thin sour cream) or soured cream
  • Scrambled eggs and avocado (optional)

How to make it at home

  1. Mix the flour with the baking powder and salt, add the lard and the liquid and knead until you have a soft dough. Leave to rest for 30 minutes.
  2. Shape into balls and stretch them by hand into tortillas about 20 cm across.
  3. Cook them in a dry frying pan or comal until they bubble and have golden spots on both sides.
  4. Spread each tortilla with beans, mantequilla and cheese.
  5. Add egg or avocado if you like, fold it in half and serve.

The trick: With beans, cheese and mantequilla it’s a “sencilla” (simple); with everything, an “especial”.
