Qurutob

Tajikistan’s national dish: flaky bread soaked in a sauce of qurut (dried, salted yoghurt), with fried onion, tomato, cucumber and herbs. It’s shared from a wooden platter and eaten with your hands.

  • Serves 4
  • 40 min

Ingredients

  • 2 flatbreads (fatir or thick pitta)
  • 400 g Greek yoghurt
  • 200 ml cold water
  • 1 teaspoon salt
  • 2 onions
  • 6 tablespoons of oil or butter
  • 2 tomatoes
  • 1 cucumber
  • Coriander, dill and parsley

How to make it at home

  1. Mix the yoghurt with the water and salt to make a light, tangy sauce, which stands in for dissolved qurut.
  2. Fry the onion rings in the oil until golden.
  3. Tear the bread into a deep dish and pour over the yoghurt sauce so it soaks in.
  4. Top with the onion and its hot oil.
  5. Finish with the tomato, cucumber and chopped herbs, and serve straight away.

The trick: If you can find qurut (balls of dried yoghurt), dissolve them in warm water: it tastes more authentic.
