Conch fritters

Fritters of chopped conch with pepper and onion, fried and served with a lime and mayonnaise dip. They’re the go-to snack at the Providenciales Fish Fry.

  • Serves 4
  • 35 min

Ingredients

  • 300 g chopped conch meat (or squid)
  • 150 g flour
  • 1 teaspoon of baking powder
  • 1 egg
  • 100 ml milk
  • 1/2 onion, 1/2 pepper and 1 chilli, chopped
  • Salt and pepper
  • Oil for frying
  • Dip: mayonnaise, ketchup, lime and hot sauce

How to make it at home

  1. Mix the flour with the baking powder, egg and milk until you have a thick batter.
  2. Add the conch, onion, pepper, chilli, salt and pepper.
  3. Drop spoonfuls of the batter into hot oil.
  4. Fry them until golden all over.
  5. Serve with the mayonnaise, ketchup, lime and hot sauce dip.

The trick: With chopped squid they come very close to the conch version.
